DIY St. Patrick’s Day Recipes

Looking for a festive way to celebrate the end of the quarter? Look no further than St. Patrick’s Day. The following are some do-it-yourself (DIY) recipes to celebrate the Irish in you.

“Minty madness” mint chocolate chip cookies

Ingredients: 1 1/2 cups sugar, 2 large eggs and 1 egg yolk, 1 teaspoon peppermint extract (or more to taste), 10 drops green food coloring, 3 1/4 cups flour, spooned and leveled, 2 teaspoons baking powder, 1 teaspoon baking soda, 1 teaspoon cream of tartar, 1/2 teaspoon kosher salt, 12 ounces dark chocolate chips, divided

Instructions:

  1. Preheat oven to 350 degrees.
  2. Line one or more baking sheets with parchment paper.
  3. In a mixer or bowl, add one cup of softened butter and one and a half cups of sugar together. Scrape the sides and bottom of the bowl, then beat on medium for about two minutes, or until light and fluffy.
  4. Add two eggs and one egg yolk, one teaspoon of peppermint extract, and 10 drops of food coloring.
  5. In another bowl, mix 3 ¼ of flour, one teaspoon of baking powder, baking soda, one teaspoon of cream of tartar and one half of salt. Add to the wet ingredients and the flour.
  6. Pour the chocolate chips into the dough Slice and mix until combined.
  7. Cover the dough and refrigerate for about an hour.
  8. Scoop balls of dough and place them on the cookie sheet.
  9. Bake at 350 for about 8-10 minutes, or until you start to see the cookies slightly brown on the edges.
  10. Let the cookies cool for five minutes on the pan, then remove to a cooling rack.

“St. Patrick’s pizza”

Ingredients: Spinach, Shredded Cheese, Tomato Sauce, Pizza Dough

Instructions:

  1. Cut a few pieces of spinach in the shape of shamrocks.
  2. Spread tomato sauce, cheese and desired toppings on the rolled out dough.
  3. Place the spinach on the top of the pizza and cook in the oven as usual until the crust is golden brown. If you prefer, take a frozen pizza and place the spinach on top to be festive.
